At its core or, The Whale is a seafood and chop house. But its cuisine and sourcing standards leave other steakhouses in the dust. Their produce and meat is sourced from several local farms. With their in-house butchery program, the restaurant's dry-aging and sausage-making are all done in-house. Not only is the seafood purveyed with exacting standards, or, The Whale is spearheading an oyster shell recycling program, a process which returns cleaned oyster shells to the ocean to become new oysters, and provides a buffer from oyster harvest rates.
